Mesquite Fudge from the eBook Raw Desserts

I'm not clever enough to create amazing fresh recipes, but I know how to drool and I know how to follow a recipe. Both of these things please me because I did both when I was given this recipe. All the ingredients from this recipe are available in the health food section of our store with the exception of the cashew butter which is temporarily out of stock this week. You can whip up cashew butter or any nut butter yourself with a bag of organic nuts and a Vitamix.

Mesquite powder is made from the pods of the mesquite plant and has a subtle caramel flavour. It's a really healthy way to give a caramel flavour to any food without the use of sugar. Mesquite contains many micronutrients including calcium, magnesium, potassium, iron and zinc. You can put it in hot chocolate, smoothies, slices and more.

Mesquite Fudge

INGREDIENTS

  • 1/2 cup cashew butter
  • 2 x 20ml tablespoons raw extra virgin coconut oil, melted
  • 1 x 20ml tablespoon rice malt syrup, pure maple syrup or coconut nectar
  • 2 teaspoons mesquite powder
  • 1/2 teaspoon pure vanilla extract
  • Pinch of fine sea salt

PREPARATION

  1. Line a 8 x 12cm container with If You Care Baking Paper (or cling film)
  2. Mix all of the ingredients together in a bowl until well combined. Pour the mixture into the prepared container and smooth the top with the back of a spoon.
  3. Refrigerate for a few hours until set and then cut into pieces. Store in an airtight container in the fridge.

Makes 6 pieces.

We like to learn a little bit about the faces behind the delicious recipes we share. We put our Fast Five questions to Lilian and here are her answers:-

ONE

Q | At Shop Naturally we strongly believe in the 80/20 philosophy of eating & living. When you’re taking some time off from your own healthy eating regime, what tickles your fancy?
A | I'm a sucker for carrot cake. (But I actually love making my raw version, which is still healthy as an added bonus).

TWO

Q | Finish this sentence. “I would kick Chris Hemsworth out of bed for a mouthful of ……………….”
A | I'd usually say chocolate, but I'm currently craving some sweet, juicy pineapple so I'm going to say that! Sorry Chris!

THREE

Q | You’ve had a long day and you’re too tired to cook, but you know you need to. What’s your favourite healthy meal to whip up in under 10 minutes?
A | I just throw some leftover veggies into a pan, heat them up and then crack in a couple of eggs to bind everything together. Then I drizzle with tahini, add a good pinch of sea salt and eat straight from the pan.

FOUR

Q | Who inspires you and why?
A | My sister. She's a mental health nurse and is so dedicated to her work. She has an incredible ability to empathise with her patients and is one of the kindest people I know.

FIVE

Q | Tell me one thing people would be surprised to know about you.
A | I train the martial art Muay Thai most nights of the week and recently spent a month at a Muay Thai training camp in Thailand. It's a male dominated sport, so people are usually surprised when I tell them.
